Spicy avocado & salmon toast (with an egg on top)

This spicy avocado & salmon toast (with an egg on top) is the perfect way to start a Saturday morning.  Filling, delicious and packed with nutrition this is the breakfast you need when you want to "start as you mean to go on."

Serves 2
Ingredients:
    • 2 small firm ripe avocados, stone removed, peeled
    • 1/4 tsp dried red chilli flakes
    • 2 tsp lemon juice
    • 4 slices great quality whole grain bread (sourdough or sprouted are best in my book)
    • 50g baby spinach leaves
    • 100g sliced smoked salmon
    • Lemon wedges, to serve

     

    Method:

    Place avocado flesh in a medium size bowl with the chilli flakes and lemon juice. Mash roughly with a fork, season to taste with sea salt and freshly ground black pepper.

    Toast bread until golden.Top with mashed avocado and divide the smoked salmon and spinach leaves evenly over the toast.  Tip: for extra protein and essential nutrients try adding a poached or fried egg on top.
