Pumpkin soup infused with collagen

Pumpkin soup infused with collagen offers loads of health benefits, making it a nutritious and delicious lunch. Pumpkin is rich in essential nutrients like vitamins A, C, and E, as well as potassium and fiber. These nutrients play crucial roles in supporting overall health, from boosting immune function to promoting heart health and aiding digestion.

Moreover, pumpkin is packed with antioxidants, such as beta-carotene, which helps reduce inflammation and combat oxidative stress in the body especially when infused with collagen. Collagen, renowned for its role in supporting skin elasticity and joint health, adds a nutritious boost to this already comforting dish. By combining the velvety richness of pumpkin with the collagen's potential to promote healthy skin and joints, this soup becomes not only a delicious meal but also a nourishing treat for your body.

2 cups pumpkin puree (canned or homemade)

4 cups vegetable broth

1 small onion, diced

2 cloves garlic, minced

1 teaspoon grated ginger

1 scoop collagen powder

Salt and pepper to taste

Optional toppings: pumpkin seeds, a drizzle of coconut cream, chopped fresh herbs

In a large pot, combine the pumpkin puree, vegetable broth, diced onion, minced garlic, grated ginger, and collagen powder.
Stir the ingredients together until well combined.
Place the pot over medium heat and bring the soup to a gentle simmer.
Reduce the heat to low and let the soup simmer for 15-20 minutes, stirring occasionally, until the flavours meld together and the onions are soft and translucent.
Once the soup has finished simmering, remove it from the heat.
Use an immersion blender or transfer the soup to a blender in batches to puree until smooth and creamy.
Season the soup with salt and pepper to taste, adjusting the seasoning as needed.
Ladle the collagen-infused pumpkin soup into bowls and serve hot.
Garnish each bowl with optional toppings such as pumpkin seeds, a drizzle of coconut cream, or chopped fresh herbs.
Enjoy this creamy and collagen-rich soup as a comforting meal on chilly fall evenings!
